Astringency

Astringency is the drying, mouth-puckering sensation that can follow a sip of tea.

Some astringency is normal, but too much makes matcha feel harsh, thin, or tiring. It often becomes more obvious when water is too hot or when the tea was not intended for the way you prepared it.
